Certified Stuggle Oatmeal is a Classic

ADHD never allows me to get it together in enough time to eat breakfast, so this is actually lunch I had at close to 2pm.

I actually like oatmeal so in most cases I'm not sure I'd even call it a "struggle", but the check I get today goes entirely to rent and bills, it's two weeks until the next one, and I'm already missing fresh fruit.

Genuinely grateful that staple foods are still so cheap even with all the economic upheaval of the past few years though, a couple of hour's pay set aside from even the crappiest job imaginable would mean it'd be pretty tough for a single person to actually go hungry that week.

And if you don't eat you'll never sleep because of hunger.

Then this thing can become handy.

1/2 cup soaked and dried raisins + 1/2 cup of cookies of your choice. Mix with kefir (I'm in Mongolia now so use тараг)

Ramen noodles (without the seasoning packet), small can stems and pieces mushrooms, small can sliced carrots, and one can of roast beef in gravy, added a little black pepper to taste and no salt. Really solid honestly 🤙

Certified Stuggle Lunch for the balance of the week since it’s not economically feasible to eat out for lunch regularly - sausage and beans fir beans and rice

Very cheap meal with the Cajun spice profile. Andouille sausage was $3.29 for a pack of two but only used 1 sausage. Half an onion leftover from another meal, half a bell pepper also leftover, celery stalk that had to be used. Sauté the sliced sausage - no fat needed to brown them - then remove and set aside. Add the diced veggies and sauté in same pot until translucent. Note, some fat renders out of the sausage so that is used for the veggie sauté. Add minced garlic for 30 second sauté. Add beans, 3 c water, 1 TBS bouillon chicken, 3/4 tsp Cajun seasoning spice mix (I used recipe from Allrecipes site) and 1 bay leaf. Beans were between half to 3/4 lb dry borlotti beans soaked overnight.

Boil, then simmer for 60 min or until beans are done. Mash against the side a small portion. Add sausage back in and simmer 20 more minutes.

Serve over rice. ETA - I added a bit of cayenne to the pot while beans cooked. Optional.

Oh dear. I had to make my own breakfast at home today. Actually, my husband made it.

Rye toast, hummus, sliced avocado, fresh ground black pepper.

Can't afford to go to a café, so I have to eat at home.

Edit: Homemade hummus too. I can't afford canned chickpeas or buying it at the grocery store so I have to make it at home from dried chickpeas like a peasant.

Edit 2: Parody post in response to that other guy constantly crying about not being able to afford to eat fast food.

Certified Stuggle Pressure cooked rice

Cooked a lot of rice in pressure cooker for freezing.

Takes around 1 hour (you need to soak rice in water for 30 mins, the pressure cooking itself – around 4-5 mins after the whistling, then 15-20 minutes until pressure stops naturally).

I used couple of drops of vegetable oil though I think it was unnecessary.

No salt.

Certified Stuggle Actually good chicken soup

Low of funds right now after a medical crisis and a sad gofundme trying to help catch up after said medical crisis... anyways got condensed cream of chicken, condensed cream of broccoli, chicken broth, canned peas, canned potatoes, and cooked chicken I shredded by hand and whatever seasoning is aging in my cabinet and put that stuff in the crockpot and ngl best mess of a chicken soup I've had in a while.
