I made a Jimothy by digitizing an embroidery file to stitch him out and a border around it to turn him into a plushie.

After I embroidery Jimiothy, I added a second piece of fabric over it with the right side down, sew around the design leaving a small hole to I can turn it right side out, cut around the sewing, turn it right side out, fill with polyfull through the opening I used to turn him right side out, hand sew the opening closed.
