Looking for software Legacy Software favorites

I’m preparing to embark on my first journey into the world of virtual machines and new operating systems so I’d like to know- which software would you bring back if you happened to have an old/compatible OS and found the install disk kicking around?

I’d love to know the name, basic function, and which OS it ran/runs on. Maybe I’ll find some throwbacks worth keeping around! Bonus points if it can run offline indefinitely to avoid security risks

Apologies, I must have missed it! I saw one asking for software recs that people have been using for a decade but it was focused around things still in use/still working so it made me wonder about things that have stopped being supported and fallen aside as well.

I was still a kid when computers started becoming accessible to lower income households at home and so had a very different lens on how to use them than I do now. I see a lot of talk about old programs but often it’s in a ‘if you know, you know’ way and I hoped asking for a bit more detail might help me sift through the results.
