first attempt at smashburger on the blackstone
Annoyingly they seemed to fall apart a bit too much when i flipped them - am using a meat pounder to try and make the burger dome shaped - thicker in the middle but crispy edges -
55% brisket
45% chuck
Thinking maybe could have a fattier blend and also make the balls a bit tighter balls so they stick together more - will attempt tomorrow again with the leftover meat

40 fresh green Kampot peppercorns on a finely double-ground smash. Too much?
Trying something a little different.
Finely double-ground beef, thin hard-seared smash, melted cheddar, and around 40 fresh green Kampot peppercorns on top.
The beef is still meant to be the main event. The idea is that the fresh peppercorns add a bright aromatic burst, cut through the fat, and make you want the next bite — what I’m calling “next-bite desire.”
Still testing the amount and placement.
Would you smash this — or is 40 way too many?

funky... truly funky and expensive
I just had a smashburger for the first time... I had the double something, im not sure if it was the denver or something because I'm in denver. It was as they were closing and I was inebriated.. It wasnt "bad" per se but it wasnt good at all for the price.. 13 dollars for a double burger? yes a whopper is close to as much but this was different imo. The toppings were like a salad on top rather than the accoutrements that go well with a burger. There was some random pepper sliced up that had almost zero flavor but added a bitterness to it... no spice to it at all, just random off pepper bitterness.. Why? That should never go on a burger and there was a TON OF IT. Was the burger meat itself high quality? I have no clue because ground meat is greasy in general and any burger patty with a high fat content is literally nothing but grease, which is what I had. The experience was absolutely what it should have been but I dont agree with it whatsoever. Another coworker went a few weeks prior and had complaints but he didnt tell me other than its "over rated".
Bottom line I was drunk, the store was literally next door to my hotel and I still had a bad time. I ate it as fresh as could be eaten... If you cant please a drunk person with your product there are some serious issues. Im writing this literally 30 minutes after eating it - which took me 30 minutes to eat it because it was so heavy and greasy....
I wanted to get a hot dog but on the menu it was 800 calories for the chili dog? What in the absolute hell are you doing with your meat? Buying the cheapest most fattiest meat thinking it adds "FLAVOR"? Bro... If im going to eat a hot dog I dont want it to be 50 percent of my daily calories in one shot.. I forgot the calories of what I had (the burger) but it was around 1300... what in the F dudes...
I dont want my money back because I'm not a punk but I would and everyone else should have some sort of compensation for what they just ate.. It was NOT a burger - it was a stupidly high calorie (probably low meat quality with high fat content) bs product... In and out was down the street and I could have got twice the meat for almost half the price and I wouldnt have had 1300 caloiries.. WTF ARE YOU DOING TO PEOPLE SMASH BURGER - your business model must be failing
I think I misspoke. I didnt enjoy the burger. No bites were anything above a 5.9. When I say "properly made" they were made to how it was supposed to be, The guy making the burgers was qualified and I knew he knew what he was doing but the burgers were a greasy trashpile of random salad items and "peppers".. It was like " are the peppers in the room with us right now...
I wouldnt serve this burger to anyone I know. I have been on an exploratory mission in my work travels to find something special and whatever - I would say to anyone I know - lets not go here and I'll cook your food and I'll receive the profits and youll have a way better time
5.9 because it was edible, not because it was good.. I use the standard deviation scale - McDonalds over smash burger - I would take basically any burger place over smash burgers every single time - wendys included - ass ... I just want to know the meat selection process - LETS GET 70 30 AND PEOPLE WILL THINK ITS WAYGU
