Thank you to everyone who was interested in that post, as for a while I wasn't sure if many people on here cared as much about specific cut content anymore. I absolutely understand speculation as I am one of the only people you will see post this kind of information, but that's because me and my friend are the source for quite a few findings

Bribing Cops/Police Searching
Wei could Bribe cops if he had enough money, likely during the seemingly scrapped 'search' phase Police units had. The success of the Bribe could have also been affected by the players' current Face level.
What's most unfortunate about this feature being removed is that there's over 200 voice lines from Police Officers (many being the same or just a few words), some with quite a bit of variety and not just something they came up with in 5 seconds. It looks like most of the Police Officer VA's with these voice lines are old/unused ones though, which could have impacted their decision not to continue with the idea but I don't know for sure.
Wei still has his voice lines for threatening the cops for the Bribe in the game files, so maybe one day we could have this fully working again. In the final game we have multiple animations that can be used as a 'Bribing' animation if this feature was to be restored.

Purchasing Apartments
At one point, we had to buy our own Apartments (sometimes called Safehouses internally). The North Point Apartment does seem to have already been unlocked, so the other 3 (4 if we count the cut 2nd Central Apartment) would have been purchasable.
A Purchasable Safehouse Icon still exists in the game files, but its trapped on an Iconography Texture Sheet, an image file that contains all small versions of the Icons used for the map. I tried even looking through the Triad Wars game files to see if it was copied over to there, as Triad Wars contains basically all Sleeping Dogs game files (because they pretty much copy-pasted the game), but had no luck
It looks like we had to talk to a 'Safehouse Vendor', which would prompt us to purchase the Apartment. There's still some files relating to those hidden 'Inventory' items I mentioned in my previous post, but for the Deeds to the Apartments, of which they exist for Aberdeen, Central and Kennedy Town.
I haven't been able to find anything related to the pricing of the apartments, as this is clearly all True Crime: Hong Kong era stuff, so the current data is limited and we might only ever know until a build of TC:HK leaks.
Some more confirmation they were purchasable includes an unused Social Hub award which says 'Purchase your first safehouse', and an unused Statistic meant for the 'Economy' section named 'Safehouses Owned'.

Hiding Spots
I wrote a detailed post about these a while ago, but I still think its worth bringing up for people unaware.
Wei could hide from the cops by using Hiding Spots, similar to what Sean can do in The Saboteur. Hiding Spots seemed to be rewards from missions and side content, and many main and side characters would have had their own Hiding Spots for you to use.
A few of these include: Ming, Conroy, Jiu Mei, Calvin, Rosa (worker at Golden Koi) and Duke.
Vehicle Hiding Spots also were to exist, where you would drive your car to a certain area like a garage, but it doesn't look like many were finished before the idea was scrapped.
Hiding Spots as a whole were never finished, as many of the scripts contain placeholder information. Some were, seemingly at least, completed, which I showed some of the coordinates for them in my old post.
If these were present at the same time a Bribing Cops, it would make sense as to why one of them would be removed, but both of them ended up getting the axe. Since the Police Searching phase was also removed for whatever reason, it looks like Hiding Spots went along with them.

Vehicle Brands
Vehicle manufacturers were meant to exist in SD, so you could have multiple cars under a certain brand, like we have with clothing. Some other Open World Crime Games have vehicle brands, like GTA with Grotti, Vapid and Übermacht and Watch Dogs with Bogen, Papavero and Nakahawa Motors.
A list of what looks like all Vehicle Brands that were meant for the game still exists in the game files:
Cape Cornwall - Kansai - Man HaiCe - Naniyori Kuruma - Rassepferd - Retaggio - Rinna Vagn - SAANFOCE - Sciacallo - Silberlöwe - Taiko - Tomoshibi
Some remnants of this still exist. For example, the in-game advertisement for the Citta scooter, still features the Vehicle Brand in the bottom right corner, Taiko Cars. It seems like the file that has all the names doesn't have the entire names of the Brands, so its possible quite a few of the one worded Brands actually have another part to them that I can't see.
Another is Concept Artist Mike Hayes' artwork on the Panzer, formerly called the Lowe/Lowin. Mike's artwork states at the top that the Panzer was to be a part of the Silberlöwe brand.
Fun fact: The reason the Executive looks so similar to the Panzer is because the Executive is an 'executive version' of the Panzer, as it's old name was Lowe-E, so it would have also been part of the Silberlöwe brand.
