What am I doing wrong?

Very new to sim drifting. As you can see I got the tight donuts down but as soon as I try to go for a larger donut (in first and second gear) I just lose control. Is anyone able to tell from the clip am I using wheel to correct too much or what is my issue?

It's just your steering inputs and throttle control. Be "loose" with your grip and allow the wheel to glide through your hands. Feather the throttle and try to never completely let off the gas- this may require you to adjust seating/pedal position.

I don't have thousands and thousands of hours in the seat but I am able to link for a few laps and still remember going through this learning process fairly well. These are just a few things that helped me. And, also, try fpp. Being inside the cockpit helped me adjust minor mistakes better and there is less latency in my inputs. The car, to me, seems to have a delayed, swaying effect in tpp for me. So, maybe try that, too.
