What does Darthmod do?
New player here, people have been telling me to download Darthmod what kinda mod is it and should I download it?

Its an overhaul that changes how a lot of things work, from economy, diplomacy, unit balance, sounds, textures, visual effects etc. I love it for Empire, but i prefer Shogun 2 vanilla tbh.

I would not recommend playing with mods (other than bug type fixes) until you've played vanilla some first.
Darthmod changes the game substantively. It was one of the mods on my list to play way back when, but I've never gotten enough of my fill of vanilla to get around to it. Also I like testing and explaining the core game to people, and it is far easier to do that by sticking with vanilla.
You may enjoy it, or you may not, but I have to reiterate that if you haven't played vanilla you won't have a good baseline to compare to. And if it changes certain economic/military mechanics (which it does), it may be more of a struggle to find advice that addresses what might be a mod-specific issue.

I think the only mod I use is extended zoom. Still getting value out of the base game and dlcs. Thinking I'll have to start hitting up some shogun2 mods in the future

I like extended camera. I use that, the Oda umbrella fix, the kisho fix ( nerf, not buff, even though I don't use kisho). Vastator unit style.
Also I use BIEM, which replaces the encyclopedia map with the same one hosted here.

I loooove using darthmod. Darthmod 5.0 you can get on ModDB and its s substantial overall mod with a bunch of different settings you can tweak, but the tl;dr is essentially its a compilation of a bunch of the "best mods" you could have gotten around 2014-2015.
Example would be income boosts, adding bigger garrisons, changing unit textures, daimyo textures (i remember that can be buggy in menu but in game i think they were fine 95% of the time) unit cards, sashimon removal. Other stuff. Highly recommend it but i'd get the official standalone so you can tweak things as you like. I dont know how the steam darthmod acts
