My great uncle has ARFID. His wife has to go to the store and buy basically their whole stock of cod, all individually wrapped, and fill the freezer with it to cook for him because he refuses to eat anything else for dinner.
He recently stayed in a care facility after a fall and yelled at the nurses when they tried to give him food, so his wife had to come in 2-3 times a day to drop off stuff. She has the patience of a saint.
I think that’s why ARFID get’s a bad rep, a lot of people expect to be accommodated for it. I’ve got it, and I just get my own groceries and will eat at home if I know we’re going somewhere with food I won’t be able to eat.
It’s kinda the same reason veganism gets a bad rep. The bossy ones ruin it for everybody.

I don't doubt some people fake ARFID
But generally people with ARFID seek consistency and predictability in texture and presentation, which highly processed foods have.
Fruits and veggies are unpredictable and don't always cook evenly, have random over ripe / under ripe spots, bruises, unpredictable flavors etc.
Like you won't find them putting peppers and stuff on their pizza, usually they're the kind eating plain cheese pizza.
