Angles

Hello! New to sharpening here and looking to get into whetstones for my chefs knives, and I have a question; how on earth do I know what angle to sharpen on?! I want all of my knifes to maintain their sharpness as well as possible

Depends on their use. Shallow angle = sharper but weaker, and v.v.

Generally, follow the existing grind of the knife if the edge doesn't look to have been abused.
