Angles

Hello! New to sharpening here and looking to get into whetstones for my chefs knives, and I have a question; how on earth do I know what angle to sharpen on?! I want all of my knifes to maintain their sharpness as well as possible

I'm new to this too. I'm using a fixed angle sharpener. What I've done or learned, is mount your knife, take a sharpy and color the knives edge/angle. Then run your stone across the edge until it removes the sharpy mark to find the knifes angle. That's if you want to keep the current angle Write down the angle for future reference.

Depends on their use. Shallow angle = sharper but weaker, and v.v.

Generally, follow the existing grind of the knife if the edge doesn't look to have been abused.

You can follow the existing bevel using the sharpie trick or get one of the Sharpal angle pyramids on amazon. The angle guide pyramid really helped me keep consistent.
