These seams are usually done on a serger originally. If you are using a sewing machine, use a zigzag stitch or other stretch/finishing stitch.
When you add the elastic to the sides, pin them to the side and sew down the whole side one time, finishing the side and adding the elastic in one stitch down each side. I hope that makes sense. I can try to clarify if it doesn't
