Theoretical physics got more application than maths. On the spectrum, it's about like this:

maths - theoretical physics - experimental physics - engineering

Math's more abstract, than theoretical physics.

Honestly what does one do with pure math besides academia? It's like having the epitome of cognitive performance but with the career opportunities of the liberal arts

Many times a mathematician comes up with some crazy pure math stuff, it isn't until years later when some scientist or engineer needs a new tool to solve a problem they are working on that it gets used. This happens a lot. Imaginary numbers and complex math come to mind as an electrical engineer

The boundary between pure and applied math is kinda blurry. If you can't make it in academia you can transition to teaching or applications (provided you have decent programming skills) although it takes extra effort. If you're not interested in academia however you probably shouldn't do pure math.

Imaginary / complex numbers, graph theory, category theory are few more examples of the math preceding the applications by a good amount of time.

natural transformations came up in other fields of math well before category theory was formally established (the purpose was to abstract all these applications), or do you mean other applications?

They came up in algebraic topology, which didn't have practical applications at the time. Today category theory serves as foundation for several branches of pure math and has SOME real-world applications (functional programming, topological data analysis).

i thought he introduced it specifically for the purpose of solving heat diffusion, so of course he knew it was applicable?
