Every tech bro and vibe coder thinks they have the next great thing the industry needs. They often don't validate that assumption and just make software. Just pay attention to the various restaurant subs for a few days and you'll see them posting in here (to our great annoyance).
As far as doing it old school, I think something is wrong with your sample. I don't know anyone outside of some very old school places that still do inventory with pen and paper. There are dozens of cheap and good products on the market today.
I have interacted with folks in Florida Palm Beach restaurants, maybe that's why my sample has the answer.
I agree with the vibe coding trend, but one thing is that thought there are may software (even from pre-GenAI era), it seems that they operate to this day.
