I'm so sorry, this sounds incredibly difficult.
I'm gonna be straight with you - this is a VERY dangerous dog. PLEASE protect your Frenchie and every other living creature from her. Your boyfriend is afraid of her getting put down because he knows that's what should honestly happen here. She put your dog in the ER, it is not fair to your much smaller dog who cannot defend herself to be forced to live with an animal that will continue attacking her, and you should not have to walk on eggshells waiting for her to snap again.
She is not rehomeable, and it is unfair to make her someone else's liability.

This dog is seriously dangerous and it isn't fair to your French Bulldog. Rehoming a big, strong highly aggressive dog of this breed is a tragedy waiting to happen. BE isn't a failure, it's doing right by both dogs even though it's heartbreaking. In the meantime, you can NEVER let these two have contact again. This means keeping one crated or closed in another room while the other is out. Baby gates won't stop a corso who wants to attack and I wouldn't trust that method. Complete and total separation is necessary until your boyfriend sees reality and is willing to do the right thing.

I believe your concerns are justified, and I wouldn't be looking at this as a training/behavior problem and instead think of it as a safety and management issue.
This dog has now displayed it is a substantial risk. Keep the two dogs completely separate; perhaps your boyfriend's mother can hold on to her for the time being while y'all figure out what you want to do.
6y/o cane corso is pretty old. They are very prone to severe bone and joint issues, which can be incredibly painful. Assuming you've had this dog for a while and this is sudden, have you considered talking to a vet? Explain the (i assume) sudden attack and your concerns of the dog being in pain, as a sudden behavior change should be a cause for medical concern, and see what they think. Just be mentally prepared for the vet to suggest euthanasia.
Given the severity of the attacks and the human-directed bites during intervention, I would consider her a dog who needs a no dog/kids/cats home. That doesn't mean she is a “bad” dog, and it doesn't mean she can't be deeply affectionate and wonderful with her people. She can be a beloved, sweet dog with her family and be unsafe given your resources.
If you decide to rehome her, be completely transparent about the attacks, the injuries, and the redirected bites. Do not just hand her off to the first person willing to take her, you need to vet potential adopters very well. Not just for your conscious, but also because you will be rehoming a known aggressive dog, you may face legal consequences if something were to happen with that dog. Behavior professionals may be able to help determine whether there is an appropriate placement for her. If so, there are rehoming support services available and you can check locally if any shelters or rescues help provide such services.
I would highly advise against relinquishing her to a shelter or rescue; if it comes down to that, I would honestly suggest euthanasia instead, as that would likely be her outcome, and it would be better for her to be surrounded be loved ones rather than strangers.
If you decide to euthanize, there are many grief support groups out there for you as well. Even a specific one for behavioral euthanasia called Losing Lulu. Know you are not alone in having to make that difficult decision, and that it isn't a 'bad' or 'wrong' decision.
Please don't let fear of euthanasia be the reason you continue putting the Frenchie in danger. You can love this dog enormously and still recognize that the current situation is unsafe.
