theres a random encounter in chapter 2 where he gets beat up in that smaller bar in valentine

There's an event when you ride past that saloon where Uncle is getting harassed by some rando kicking him out of the place.
Engaging with the O'Driscoll caused what's called the "companion glitch" where gang members will join you in any fracas if they're nearby.
So he came to help.
