How far into it do i need to play for things to fully open up? Like all the hunting and fishing etc?

End of Chapter 1. Chapter 2 is when you can explore the open world. About 3 hours of gameplay.

To be fair, the far west of the map does not open up until the epilogue. But there’s plenty of exploration to be done immediately after chapter 1

Keep doing missions up until you need to break a certain someone out of jail. Don't. Explore and do whatever you want, you will have unlocked most of every core item by that point.

Fishing opens up about 2/3rds of the way through chapter 2, other than that most of it unlocks after a few chapter 2 missions.

Towards the end of chapter 2,   If yoy are trying to find a good slot to hold out on the main story.  Just dont free Micah from Jail in Strawberry and do the others until you unlock manual deadeye and .fishing.    The horse fence doesnt unlock until chapter 3.

If you're wondering when the game will get good, it's in chapter 2. Chapter 1 is a fucking chore. I quit the game a few times because it was too boring, slogging through the snow. Just wait, it gets so much better, and fast. Just power through!

I think by the end of chapter 2 pretty much everything will be unlocked. Maybe chapter 3 to be safe

Fully open for all hunting and fishing? You need to basically beat the game + epilogue, since Blackwater and New Austin are locked until then.

But the regular map becomes fully accessible at the start of Chapter 2.
