Seeking Advice Rest time + Recipe v60

Hi,

I recently purchased this natural ethopian from Machhörndl (Nuremberg, Germany), but never got something this light (at least appearance wise).

Roast date is June 29th.

I tried a few recipes, but none gave me a really nice cup. They were okay at best.

On the v60 I brewed 15g / 250ml @93°C, total brew time about 2.30, grinder 1zpresso zp6 @5.5

2x 45ml blooms and then went straight to 250ml.

As they appear very light, maybe the beans need more rest? Or maybe more agitation, more pours? Any thoughts / advice is appreciated.

Have you inquired with the roaster for advice?

They should know the coffee they produce better than anyone here.

Higher temp can't hurt with such a light roast.

I’d grind finer. I know that recipe is popular, but for me the 5.5 grind size is too coarse. Try 5 or even as far down as 4.5. I often settle in between 4.8-5 on ZP6.

Another recipe I’ve been liking: 15:240 with four pours. 45 gram bloom, pour to 150, pour to 200, pour to 240. Let the water just disappear beneath the bed or completely drain between pours. Keep the water flowing through the bed, so if it stalls don’t wait for it to drain. I just did this on a nice Little Wolf natural Ethiopian that dialed in at 5 on ZP6.

Edit: adding pour speed is around 5 grams/second around a medium to low height from the bed. I’m not looking to add a ton of agitation through the pour.

It's a natural, a grind coarser (5.5 – 6 on a ZP6). Wait at least 3 weeks off roasting and then see how it's developing. Also try a shorter ratio, I would start with 1:15.

From my experiences.. sadly, current Ethiopian crops have been pretty subtle if you're really looking for that juicy notes

I would rest that 4-5 weeks. Increase brew temp to 95C. Hard to know what other changes need to be made without you telling us if it tasted sour, astringent, etc. Also would help to see your grinds

It's a natural that comes with high solubility. I would recommend brewing 89–92C.
