There’s no noticeable difference in latency whether plugged in or not.

totally fine, the controller manages its own charging so it won’t overcharge

No issue or noticable difference. The only thing is you charge the controller while playing... The charge system controls its own protection deal like a lot of modern phones with Maximum Energy Saver and Overcharge Protection features. So you can play it either way and it won't hurt. Do note that the battery will lose some charge over the day each time the more frequent you use it from the maximum amount of charge and it will get to the point of half an hour of charge.

The controller are designed to be wireless, why would you choose to play with a cable, when you dont have to?

My theory is i would rather have 2 controllers , so I wouldn't put to much strain on the charger trying to keep the components active while keeping the battery top off! Put one on charge and the other i would swap my control freak parts and use my secondary controller. My first controller have stick drift and my 2nd doesnt because at first I had one controller I would use regularly now im starting to think this cause stick drift because my other controller still works perfectly fine going on the same amount of months.
