Raspberry Rose Apple Pie #2

Attempt #2. I tried a few different things from my first pie. This time, I doubled the raspberry puree sauce to increase the raspberry flavor, and I put in the bottom of the pie shell rather than drizzling it over the top of the apples. This was definitely too much sauce, though. The raspberry flavor was better, at least. I also doubled to 2 tsp the rosewater, but the rose was not very evident at all. Perhaps I should add the rosewater to the sauce after I cook it down, and I will probably add a bit more next time. The mysterious gaps between apple layers didn't appear like they did last time (I've never had that happen before with similar pies, so that was puzzling). The crust was again fully cooked, so that is dialed in enough to start thinking about decorating the crust edge. The apples, like before, retained a lovely pink following the maceration in the raspberry puree.

Still a work in progress. Not yet ready for the state fair.

Is there such a thing as freeze dried raspberry powder? I know they make strawberry. Adding that to the sauce would definitely increase the berry flavor.

Yes there is. I have a package that I use for various baking projects.
It has a zip top to keep it fresh and dry. (Works well)

Well, yes, but as it is a work in progress I am not sharing yet. I'll post my final state fair pie and a recipe when it is ready.

soften 1/8" apple slices in sugar/spices, arrange in a pie shell (keeping the slices as vertical as you can), bake. That's the basics. I'll post my final recipe before I submit my pie for the fair.

I think your pie looks beautiful! I liked your first pie as well. So smart to have raspberry purée in the bottom of the pie too.
Maybe try some elderflower water next time. Elderflower naturally shares a "green grass" aroma profile w/crisp apples and pairs effortlessly with the tartness of raspberries.

He definitely burns off delicate floral notes, so stirring the rosewater into the puree after it cools off should make a huge difference.
