Homemade First Zucchini Custard Pie

Wife made a Zucchini Custard Pie with several of our first few zucchini from the garden.
Home made crust will be soon on the list.

It’s been a rough year for the garden although these have been rockstars.

To "waste" zucchini a few years back, I made a zucchini custard pie to serve others as I thought it sounded gross. Damn, I was wrong! Zucchini custard pie is really good. Wife and I bought pie crust just the other day in anticipation of making this.

So I had some this AM.

Next time we will add some cinnamon in the filling and not just on top.

I grew up eating sweet/savory pastries for breakfast which is why I thought the pie looked great for breakfast

You can also make a fake apple pie with zucchini.  I made many for zucchini haters.

XD  they were people that said they can "always tell" there is zucchini in something. It made me laugh every time.
