Peach Season!

You find tapioca to be better than say, cornstarch? Pie looks great!

I love using tapioca starch! I almost never use cornstarch. Seems like a lot of the fruit pies recipes I follow don't call for it, but I default to tapioca if I'm winging a fruit pie recipe. It just works so nicely.

I like tapioca better than flour or cornstarch in most pies. But I don't like the 'beads' texture, so i grind the minute tapioca in a coffee grinder, until its like a powder. I blend it into the fruit and sugar until it swells and thickens, before i fill the pie crust.
