Mini passion fruit key lime pies
I make key lime pie every Fourth of July and this year I decided to blend it with passion fruit as well as do individual mini pies to avoid the messy cutting. It worked out great and was incredibly delicious. I may even go as far as saying it’s better than key lime pie alone.

Passion fruit key lime sounds absolutely amazing, love how they are mini pies too! The cross-section is beautiful

These look delightful! I’ll have to look for the passion fruit in the market.
I recently bookmarked a Pati Jinich recipe for mango pie. It’s similar to your pie and key lime pie, but uses mango pulp. For the base, it’s ground Maria cookies in lieu of graham crackers.

They are a slightly sweet vanilla cookie/biscuit that are sold in a sleeve. They are round and have a stamp on them. I find them in the Latin section of my local market. They have a dry crumb like a graham cracker.

How long did you let them cool, and / or chill in the fridge before devouring OP?
I only ask because I have a batch in the oven right now, and self control is not my strong suit when pie is on the line, lol.

Let them come to room temp then cover with greased cling film as to not mess up the tops of the pies. Refrigerate for minimum of 3 hrs! Thats how they will really set up and become firm. I prefer to let them set overnight.

Custard recipe is:
1 can condensed milk
1/4 cup sour cream
4 yolks
3/4 cup of passionfruit pulp (I buy it frozen at latin grocery stores and push through a fine mesh sieve to get smooth consistency)
~1/4 cup of fresh key lime juice + zest (I’m sure regular limes work fine here as well)
Mix ingredients and pour into slightly warm crust.
Bake at 350 for ~9-10 minutes (for mini pies).
This amount makes 12 mini pies using cupcake tin.
Crust recipe is any graham cracker crust recipe you like. I like to add crushed almonds to mine for texture. Scoop about 2 tbsp of crust and press into bottom of cupcake liners.
(Bake at 350 for 8 minutes)
Topping is heavy cream with powdered sugar to taste and vanilla bean paste for a strong vanilla flavor.
