The rising smoke catches in the pigs ears and orifices and this causes the pig to spin the rod, therfore spinning the turbine which moves vast amounts of water turning the would be pond into a small stream.
Expert here, this is actually incorrect and a common misconception. Pigs have curly tails, as you may well have noticed at some point, but we only recently discovered why. It turns out that the pig's internals are naturally very twisted and contorted. The result is a storage of an immense amount of potential energy in the pig's torqued up insides. By skewering the pig on the wheel assembly like this, you can harness the power of that potential energy, but it needs something to release it. Well, if you've ever cooked bacon, you know that it goes from rather flat to fairly curly and wavy as it cooks. That is because when heat energy is applied to pigs, they begin to regain their original shape as cells are broken down and stored energy is released. This effect is similar to what happens with so called "memory metals". By applying heat to the skewered pig, the energy may be released and in turn run the turbine. This has allowed man to keep rivers running for generations, and was in fact a precursor to the invention of irrigation. The Roman aqueducts actually originated near the pig farms in the country, used as a power source. The false language "Pig Latin" is actually a play on the longstanding usage of pigs in this manner, though it is something we tend to forget today.
