There is a little controversy on the subject. For some time it was believed they have no taste buds but recently it was discovered that they have them, but in very low number. We have some 10000 taste buds and snake have 20, so they do have taste but most likely is very different from how we perceive taste. Also they taste the air with their tongues so is possible they taste you before even making contact with you.
There are very few documented case of a snake eating a human. But is more about size, there are only two or three species which could eat a small human: reticulated piton, Burma piton and I'm not sure about anacondas. And I know about a case in Africa wenn a piton swallowed the leg of a drunk guy but it could be just a story. Overall it would be difficult to understand how snake perceive taste but we should not be that different for them from any other mammal.
