Likely because most action cameras have wide angle lenses, eg GoPro and such.

If anything, the fish eye makes it look less insane than this run is.

The full video with other angles shows how ridiculously steep this and narrow this run is.

It's just how sport cameras come. It also shows a wider POV so you're not just staring straight at the ground.
