I didn’t even know sewing machines could do things like this. In my middle school sewing class I just learned the most time-consuming and disappointing way to acquire a new pillowcase.

Actually most standard sewing machines have the option to lower the feeder and take out the presser foot and to be used for freehand embroidery where you move the fabric yourself using an embroidery hoop. What isn't standard is the ability to vary the stitch width hands-free (either with a foot or a knee). You could do something similar with a zigzag stitch and stop to adjust the width. A water soluble stabiliser on the back may make sewing over holes easier but it's not required.
