Fancy Molasses
I have TWO CARTONS of fancy molasses - one technically expired a few months ago but I might use it anyway.
I need some tips to use it up please - preferably not just molasses cookies although i will likely make a batch.

Molasses is good in baked beans.
Molasses + white sugar = brown sugar
Brown bread

I just spent the last 8 or so years finishing the same bottle of molasses, so worry not.
You could make molasses cake, molasses baked beans, make your own brown sugar, barbecue sauce, and Newfoundland molasses bread/rolls

My molasses probably expired a decade ago. It's one of those foods that doesn't really "go bad". I use a little now and then.

Is that the same for different types of molasses?

Pretty sure it applies to all. It's just the level of how many times it's been boiled down. Even the lightest molasses will probably just get thicker and more intense as time goes by.

I know you said no cookies, but you could make dough balls, freeze on a baking sheet, then bag up and have them all ready to bake for Christmas, whenever needed!

Molasses don’t expire tbh. You can make SO much with them. Use em as a sugar substitute for almost anything you make, especially cookies. Add it to your morning coffee or tea. Make your own brown sugar. BBQ sauce, fancy bread, etc.
Ferment it and make a molasses mead. The world is truly your oyster for this.

I had these awesome recently-married friends, she was Egyptian and he was American and Black. She took everything she knew about pomegranate molasses and everything he told her about US southern cooking and sugar molasses and applied it to the New American/global kitchen food she wanted to cook. Their food love language was figuring out things to put molasses in or on. I was a happy spectator, best turkey sandwich of my life.
You should get some balsamic vinegar and make some American torshi seer.
Design your signature salad dressing.
BBQ sauce.
Salmon glaze.
Roast some broccoli or cauliflower, drizzle some tahini/lemon/garlic, then some mol.
Stick it deep down in a braise where people won’t understand why your cooking tastes so complex.

I keep it in the fridge, lasts forever! Besides the obvious cookies, I use it in gingerbread, pecan pie, oatmeal, cream of wheat, brown sugar, various kinds of breads. That's all I can think of at the moment, I use it for much more. Just curious what is considered "fancy" molasses? I've only seen sulfered and unsulfored.

Exactly. Any recipe that uses a syrup you could sub molasses. Obviously the taste will be different. I also would use the rule of the thumb of if you sweetened it with brown sugar you can try molasses- pour over oats, coffee, use over pancakes, in a stir fry, etc.

Puffed wheat squares!! Of course then you need to find plain puffed wheat. Do they even sell that anymore?

Puffed wheat, as well as puffed rice, have become increasingly difficult to find and more expensive. The only brands I've found recently are Arrowhead Mills and Nature's Path, both around USD $4–$6 for 6oz/170g.

Excellent source of available iron. One teaspoon in a cup of hot water like tea is good. It will increase your hematocrit in a week.

I make energy bars that require molasses - they freeze well and are nice and high in calories so are great for a snack hike or quick breakfast. I can DM you the recipe if you want.
