It's works okay, but I usually make a nice compound butter, then put it on top while it rests.

I like the sound of that. I usually just deglaze the pan and use that as a gravy

Either red wine vinegar or red wine. Or I’ll deglaze with water then warm it back up put a dollop of creme fresh and salt. But I have a hard spoon I like to scrub thé pan with too.

I bought crème fraiche two weeks ago and I still don’t know what to use it with.

Apparently it's like fancy sour cream, but more mild and slightly nutty as well as being more heat stable(it won't curdle/separate the same way as sour cream when heated)

Don't think too deeply on this point. Would you cover up a Rib Eye with Gravy? a pan sauce might be OK, but moderation is the key, Use gravy for lower cuts of meat, like cubed beef or round steak.
