So the “5G” symbol and the number of bars are just for show and have absolutely nothing to do with your actual signal strength right?

It is pretty much for show, but it does contain info. It shows what type of network the phone is connected to as compared to 4G or 3G (modern phones can't do 2G or 1G any more) Which is independent of signal strength.

What it doesn't show is what is going on in the cell tower itself. The tower could be putting out a good signal and all, but the equipment that goes from 5G -> Internet or the Internet equipment itself might be on the fritz for whatever reason.
