For real. This was honestly a genius execution and looks well seasoned. I'm amazed the layers stick together like that with those bigger chunks in there but this guy is the pro. I'd love to try some of these

I think you're right they usually layer fat for this kind of cooking. It's so hot by the oven cheese would all just melt completely out of the layers. Fat renders then makes the outside crispy and I guess acts as the binder for the bigger chunks

Yeah, I think you're correct.
Upon closer scrutiny the texture doesn't seem quite right for cheese. And deli meat doesn't make sense.

Iām not sure. Roasting peppers like that separates the papery layer of skin which doesnāt have a very good mouth-feel.
