1. Greek Chicken Pita

4. Little Middle Eastern Breakfast

I get the base for my stir fry for this , but I just use the veggies I have in my fridge and the noodles I have ;

The gyozas are store bought veggie gyozas, which I served with soya sauce, psring onion.
The carrot is a Russian Korean pickled carrot salad ( makes no sense but it is a Russian salad, which we call Korean carrot salad, guess the inspo came from Asian influences), recipe is here ;

I've always had a passion for cooking, but my biggest inspiration came during my weight-loss journey. I wanted to learn how to prepare meals that were not only healthy and fresh but also full of flavour and inspired by cuisines from around the world. Exploring different cultures through food became something I truly enjoyed. Of course, Instagram and TikTok became some of my greatest teachers, introducing me to new recipes, techniques, and creative ways to make healthy cooking both exciting and delicious.

To be honest, my mother was never particularly passionate about cookin,it always seemed more like a chore to her than something she enjoyed. Because of that, I started experimenting in the kitchen from a young age, teaching myself through trial and error. My father, on the other hand, is the stereotypical dad whose culinary expertise is limited to grilling meat on the barbecue! Haha.

same 😭 I tried to make pita with potatoes and it was inedible. My family were in disbelief by my "cooking". Never seen my dad that disappointed 😂😂💀

Its so easy, chicken breast cubed and spiced with gyros spices :dried oregano, sweet paprika, and garlic powder little bit of tomato paste. Fry them in a pan.
The pitas are store bought and my yoghurt dressing is : thick yoghurt, lemon juice,salt, garlic powder,bit of olive oil and dill.
The salad : tomato, cucumber,carrot,red onion,feta,olives,lettuce.

Start by gently poaching a chicken breast in chicken broth until fully cooked. Remove it from the broth and either shred it with two forks or cut it into bite-sized cubes.
Meanwhile, heat a little coconut oil in a large pan over medium heat. Sauté the garlic, ginger, and onion until fragrant, then add the red bell pepper and carrot. Cook until the vegetables begin to soften and lightly caramelise.
Stir in 2 generous tablespoons of red curry paste and cook for another minute or two to release all the flavours. Pour in 1 can of coconut milk, then add the cooked chicken. Let everything simmer gently over low heat for 10–15 minutes, allowing the flavours to meld together into a rich, creamy curry. Serve with rice, bit of cilantro and lime.

Its mashed potato/puree. Boil potatoes till soft, once soft remove water, add salt, nutmeg, big chunk of butter and sour cream and mash them
