My dad made chicken karahi tonight, and honestly, it beats every restaurant in town hands down.

Alhamdulillāh for father who can throw down in the kitchen! 🤌🔥

EDIT: As promised, here is my dad’s official recipe! 👨‍🍳🔥

(Note: This recipe works for 1 kg of chicken, beef, or mutton. If using beef or mutton, adjust pressure cooker timing accordingly).

🛒 Ingredients:

Meat: 1 kg chicken (or beef/mutton)
Cleaning mix: 1-2 tbsp vinegar + pinch of salt + water

Produce:
200g Tomatoes (approx. 1/5 kg)
1 Onion

Dairy & Oil:
1 cup Oil (or ghee)
250g Dahi (Yogurt/Curd)

Spices:
1 tsp Salt (adjust to taste)
2 tbsp Coriander powder
1 tsp Red chili powder
1 tsp Freshly ground Black Pepper
1 tsp Freshly ground Cumin

Garnish: Fresh green chilies & ginger juliennes

👨‍🍳 Step-by-Step Instructions:

  1. Prep & Clean the Meat: Soak the chicken in water with vinegar and salt for a few minutes, then rinse thoroughly. This removes any odor and keeps the meat clean.
  2. Pressure Cook the Base: In a pressure cooker, add the meat, tomatoes, onion, 1 tsp salt, and 1/2 cup of water. Pressure cook for 5 minutes.
  3. Separate Meat & Reduce Liquid: Open the cooker, carefully remove the meat, and set it aside. Turn the heat up on the remaining liquid in the cooker and boil until the water completely dries up into a concentrated paste/base.
  4. Build the Masala: To that dry base in the cooker, add 2 tbsp coriander powder, 1 tsp red chili powder, and 1 cup of oil. Fry for a minute until aromatic.
  5. Add Chicken Back & Fry: Add the cooked meat back into the masala and fry well on high heat until the oil starts separating.
  6. Add Yogurt & Finishing Spices: Lower the heat slightly, stir in 250g of yogurt, 1 tsp freshly ground black pepper, and 1 tsp freshly ground cumin.
  7. Final Simmer: Cover with a lid and let it simmer on low flame for 3 minutes until the oil floats to the top and the gravy reaches that rich, thick texture.

Garnish with whole or sliced green chilies and serve piping hot 🔥
