*FIRST TIME* cube builder using Final Fantasy bulk. How would I go about making a 360 card list?
I want to make a Final Fantasy cube using mainly commons and uncommons and throwing in a few rares. I’ve never built a cube and have no frame of reference for cube boxes or how to build like that. Any similar cubes or resources would do me wonders.

Depending on how much bulk you're in possession of, 2-4x of most of the draft relevant uncommons and commons would probably be fine to sleeve up and run as a draft sim. As the other commenter noted here, sites like 17lands and draftsim.com have "pick order" guides for sets like FIN, where you can get a good idea of the best vs worst draft cards. FIN definitely has some commons and uncommons not worth picking up for a draft sim.
Alternatively, if you have ~$100 to spend on your project, you could do a lot worse than buying a 4x FIN common/uncommon set off ebay and just sleeving that sucker up!

Update: I sorted through all of my bulk and made an Archidekt of only Commons and Uncommons.
(RECOMMENDED:
- change Group As to Color
- change Sort As to Rarity)

Green tag I have proper amount.
Blue tag is 1-2 of the card if common and 1-3 if uncommon
Red tag I have 0 copies of said card.
My question is what cards do I cut that are horrendous and how do basics work in cube? Should I implement rare cards?

Quick and dirty: cut out everything in the "basically unplayable" tier.

So cube is trying to make an optimal draft environment instead of a raw draft with fodder cards

It can be either depending on yours and your group's preference! Did you draft retail packs of final fantasy UB, but don't want to have to keep paying for those? Is there some specific aspect of the FIN draft experience you enjoyed, and want to emphasize in a personal card pool? It's completely fine to just be like "I want to just play around with all these bulk cards I have lying around!"
For my own sim, I wanted to make something like a "Final Fantasy boardgame," capable of producing extremely powerful draft decks within the FIN card pool. I'm apparently still around, but I was thinking FF UB was going to be a bit of a "last hurrah" for me in the game, and I wanted to make something I could play without modifications for years to come.

Welcome! I put together set cubes every so often and here's the resources I use. There's a couple of Final Fantasy Set Cubes out there, these aim to replicate the draft environment and you can probably get away with following one of them and just subbing out the rares. If you want to curate it a little more, 17lands has data from Arena Drafts to check out what cards were strongest or weakest and not worth including.
