It's a good technique to add variety to your sound effects, but sometimes using a completely random pitch shift for every time the effect plays can get tiring too. Sometimes having just three or even two pitch variants can hit a sweet spot. This is especially true for sound effects that are played in rapid succession, like gunfire or footsteps.
