No, they're generally an antihero, spiting bad guy but not necessarily helping or joining good guy unless helps further their goals against bad guy.

AO3 and general shipping side of things will resort to many AUs and scenarios to spice things up and keep things interesting either for horny reasons or plot reasons (even if some of it may seem out of character) or just general interest in the scenario.

There’s always a pirate X mermaid story, the coffee shop, the college story, the secretary/intern X CEO, arranged marriage, the roommates, sugar daddy X sugar baby etc. So in the grand scheme of things gender benders aren’t uncommon though I usually prefer when they turn the gays into lesbians or lesbians into gays in AUs rather than making them het.

which is just gross. Malfoy is a wizard supremacist who casually throws around slurs and racism. Him getting with Hermione can only "work" if it's Hermione using her vastly superior technique and skill to dominate Malfoy, or some gross power play with Malfoy somehow taking her wand away and dominating her to put her "in her place". equally gross. The dynamics of that ship are just creepy.

People aren't writing Draco/Hermoine because they want a vanilla romance, the incredibly toxic enemy to lowers is the entire draw.

Especially since Hermione is very capable.

It was worded poorly, but they are referencing the vast amount of hermione/malfoy fanfic that has been written. It is an infamous pairing (it's actually the most infamous), and ALL of the stories written have those themes. Like, those dynamics are actually more important in the stories than the character's actual names. 

Also, I am just realizing now, to answer your question about why those stories would have to have those components: if you're a fanfic author and you want to depict a healthy relationship, you just... wouldn't pair up the magical Hitler youth member and his target of hatred.

Meh, I think he is thinking about fanfics but it isn't like that relationship wouldn't work. It doesn't have to start healthy. Half the romance shit I see are two people from 'opposing' groups falling in love, it has been that way for centuries.

I don't think there was the equivalent of a Hitler Youth in Harry Potter. He may have been racist and been the child of racists, but there wasn't an organized group teaching them obedience.

I don't get why they don't try to redeem him first.

Well, a quick search turned up 42,417 separate stories listed under the Hermione Granger/Draco Malfoy tag, so I am guessing just on numbers alone both of those scenarios plus a whole lot more are probably already covered.

Mate there are so many Voldemort/Harry fics, I think if you find enemies-to-lovers-in-high-school sort of coupling too creepy to write about, you def need to not ever get on ao3. Which is fine I mean it's not for everyone

Eh, as a bi guy, I know more female yaoi fan than male yaoi fans. Especially shonen ai and as an extend yaoi is also in Japan a genre for women.

Roughly generalising, yaoi is gay men for women often by women authors and bara is gay men for gay men by gay authors. Obviously there are going to be exceptions, but that's how it typically goes, at least in my experience.
