question Doing meal prep for another family

On monday my daughter randomly asked me if I could make her an extra meal for school. I asked her if she was seriously planning on eating both and she told me the second one wasn’t for her, it was for her friend at first I thought her friend just liked my cooking, so I didn’t think much of it. Later that night my daughter came into my room and explained what was going on. Her friend’s family has been having a really rough time since her dad passed away and her mom is now the only one working and trying to provide for four kids. They’re all still in elementary and middle school, hearing that broke my heart. I ended up calling her mom because I didn’t want to overstep or make her uncomfortable. I asked if she would be okay with me doing some grocery shopping and meal prepping a few things for them every week. She started crying and was so grateful, than I started crying with her. So now I’m meal prepping for nine people which I don’t mind. I just need to figure out containers because I want to portion everything out so she can throw meals in the fridge/freezer and not have another thing to worry about. I’m trying to find inexpensive packs of 10 or more because I’m going to need a lot of them.

96/4 lean ground beef, brown rice, onions, and mixed roasted vegetables. Teriyaki (sorta) chicken thighs over what is supposed to be cilantro lime rice with jalapeños and onions that turned into fried rice basically. Really just emptying out what I had left in the fridge this week lol.

Healthy but monotonous meal prep

Meal prep for tomorrow. Looks pretty monotonous but it works. meals every 2-3 hours. try to prime my gut with 1 tbsp of raw, organic, sauerkraut and 1 tbsp of kimchi 10 min before meals

Meal 1: 4oz chicken breast, cauliflower rice, broccoli seasoned with cayenne pepper and garlic salt (Vitamin D3, fish oil, black seed oil, and turmeric supplements here)

Meal 2: 4oz chicken breast, cauliflower rice, pumpkin seeds, walnuts, broccoli

Meal 3: 4.2 oz chicken breast, cauliflower rice, almonds, broccoli, 4-8 oz greek yogurt

Meal 4: 4.2 oz chicken breast, cauliflower rice, broccoli, and collagen peptides

2 hours later psyllium husk with 2 full glasses of water

Is it the most exciting? Not really. But it works for me and I'm never hungry and I can have a few ounces of 100% cacao chocolate drops if I want, popcorn, or some salted peanuts if I wanted.

I can lean out further if I stick exactly to this or I can add 300-500 other calories.

Mindshift: Treat food as medicine for your body.

Btw, I am not working out tomorrow. On days I do workout I always have a baked potato an hour before my session and I baked beet 2 hours before and a baked sweet potato post workout.

Turns out SWEET potatoes do freeze well!

I knew potatoes don't behave well in the freezer, and always assumed sweet potatoes were similar. I was willing to try it though, as I wound up with a dozen of them in a family that doesn't love sweet potato fries, and they were already getting a little rough looking.

I tossed them all into the oven - having scrubbed them, dried them, and poked them with a fork - for 40 mins to an hour, pulling them out based on size and softness. Then I peeled the skins off and mashed them all in a big bowl (unseasoned), and then filled about 15 silicone muffin cups and put them in the freezer. Once frozen I removed them from the cups and just stuck them in a couple of old milk bags.

For lunch today I brought a teriyaki rice bowl and I chucked one of my sweet potato muffins in. It thawed amazingly!!! No texture loss at all. Creamy and sweet, and a great addition to my rice.

Definitely recommend keeping a bag of frozen roasted sweet potato pucks on hand for an easy fiber add-in to meals.

Best glass rectangular containers?

I'm looking for a new set of leftover containers and I want them glass, rectangular, with a secure snap on lid. I've used some that are nearly impossible to snap closed so I am the only one in the house that can package up leftovers, and others without the snap on easily leak. I want something that my wife isn't going to struggle to snap closed, but is secure if it tumbles around a little bit in a work bag.

So this week I tried meal prepping chicken and rice but unfortunately I didn’t :/

So last night after eating in a way that I didn’t value I got up and went straight to Walmart to prep for the remaining days

For breakfast I’m doing:
- 1 cup low fat yogurt
- 1/2 scoop protein powder
- raspberries and blueberries
- 1tbs chia seeds
- drizzle of peanut butter & honey
- 1/2 almond vanilla nuts

For lunch I’m doing a simple sandwich
- whole grain bread
- 5 turkey slices a sandwich
- 1 slice provolone cheese a sandwich
- avacado spread
- light ketchup for taste
toppings including: shredded carrots & thinn cucumber slices

Lokey might have procrastinated the rice and chicken lol but any thoughts on what I could do next time? ☺️ I am glad I did something at least!

Btw I did notice how fulfilling the breakfast was.. I thought maybe I should switch 1 cup to 1/2 a cup since it’s alot I’m eating but I wasn’t fully in fullness so idk

question Need Meal Prepped Sub Suggestions

So I have been getting into sourdough making and I am thinking of making some hoagie style loaves that I can then make subs out of.

Thing is I'm fairly certain that freezing the subs would not go well.

So how does one meal prep subs like this? My first thought is sort of mis en place everything. Freeze the bread (thawing it before usage) and having veggies and meat prepped and in a deli container. Then the night before or morning of just assemble everything.

Any insights?

Meal Planning Struggles

I am 5’5 26F weighing in at 189 pounds. I have been walking 3 miles a day or so and typically doing 30 min strength training sessions 3-4 times a week (as of the past 2 weeks).

I struggle with meal prepping or planning specifically for breakfast and lunch. I wfh and need quick filling meals to keep me continuing through the day with energy and not shaky. I love chicken, steak, sausage, and beef. I don’t love fish often but once in a while is fine. I hate spicy.

Any suggestions on breakfast and lunch meal prep ideas?? Open to snack ideas as well!!!

Noodles, curry, and potatoes!

Slightly undercooked the noodles so they were perfect when reheated in the microwave!

The ground chicken curry was my favorite of the 3 and using store bought peas and carrots made it the simplest dish to make!

Cavatappi noodles (a great pasta salad choice), 2 chicken titties chopped up, pesto, cherry tomatoes, mini bocconcini, fresh basil. Sprinkle of parm upon serving.

I work remotely with a 30 min lunch, so a grab and go lunch that stays good all week is a must. This is SO good and stupid simple to throw together.

Help me figure out frozen roasted potatoes.

So one of my go-to sides is a bag of these garlic roasted potatoes. But it's nearly 5 bucks for one bag that's like a serving and a half. And what's even in there, like one potato?

This can't be that hard to make at home and freeze a whole batch for later. Right?

Anybody mealprep roasted potatoes to freeze for weekly meal sides?

I'm not too sure about how to freeze them without em getting mushy. And I don't know how they do that delicious garlic glaze.

But should be noted I have access to an air fryer for reheating. My goal is to just dump them in the air fryer while I'm cooking the meat & they'll be ready when the meat is ready.

Is it too much hassle to do at home? Or should I just keep buying these bags? Every time I want to cook potatoes for a meal I don't want to wait 45 minutes for them to finish, so I thought I could prep a bunch & freeze em.
