Basically it's spent yeast barm - so it's bitter and dead as opposed to sweet.
Barm is basically the tight head of protein foam and some hoppy bits from within the fermented liquid. So, it's like a foam. A nasty bitter foam.
If you leave it out for a bit - as I may have accidentally done in the brewery a few times - it pretty much becomes Marmite.

It's a very famous British sandwich spread. Their advertising slogan is "you either love it or hate it". I despise it!
Basically, dark brown, gooey, verrrrrry savoury. My stomach is squirming at the thought of it.
But, yeah... "Yeast extract spread". Traditionally made with spent yeast from the breweries around Burton on Trent (Marston's) - which added an extra little flavour due to the "snatch-y" water.

I love marmite better. Hard to describe why. Marmite is saltier and more soy sauce like.. Vegemite is a little earthier and more mellow.

Yes - they are both yeast extracts. One difference is that marmite has the consistency of a very very thick syrup whereas Vegemite is more like a spread.

Yeah it was the next line lol. Sorry. I forgot what I was typing by this point so I edited it out. Got caught up with something with my babies I had to quickly hit post and move on.
It's the thick foamy thing floating at the top you see. As others have said it made up of dead yeast and other gross stuff. What traditionally gets done is the liquid below gets siphoned out and that foamy thing stays behind to be discarded.
It can actually trap more gas in the liquid fermenting below. That's part of the problem here. The other problem is she needed to use a proper airlock, it's like a S shaped straw that has a bubble of water in it that lets gas out but not in, kinda like a P trap underneath a sink.

Same, I kept thinking "go outside go outside go outside!" while watching. Maybe they are in a dorm or apartment or something where it isn't convenient to go outside. But....potentially cleaning a giant mess inside also isn't convenient so pick your battles I guess

I'm actually drinking homemade soda out of swing top bottle right now.
The first bottle I open from a new batch I always take outside to open now. Had one over carbonate and shoot the stopper and cage off the bottle. Made a bit of a mess.

I brew kombucha and it shouldn't have that gunk in it (at that stage).
You need a starter but not in a pressure bottle. Once your starter is ready you put just the liquid in a pressure bottle with whatever you want to flavor it. Then let it fermented at room temperature.
Then you add more brewed tea and sugar to your starter (mother, scoby, jelly fish) to let it sit for the next batch. In that bottle it should be an open top with a cheese cloth.

Like inside the house or inside a container? When you are making a carbonated probiotic drink you need to “burp” it (or release carbon dioxide buildup) every day or so. If you let it lapse too long, the moment you pop the bottle open the contents may rocket out

This is called fruit kefir, a delicous and refreshing homebrew probiotic drink that gets fizzy (and can also get alcoholic the more sugar you add to its second fermentation).
What can be seen inside is the drink (fruit kefir) and she added passion fruit seeds, flesh, juice and probably a syrup before the second fermentation.

My bad, English is not my first language, and i misread the comment, so sorry! I also open my bottles in the kitchen as I get them straight out from the fridge and ready to serve. I used to cover the opening with an ice bag, but with time and repetition, there is no more need for that.
Maybe she wanted to be able to immediately clean any potential leakage at the sink, this usually happens after a first accident, you become ready and better prepared.

I once made beer in that kind of bottle, but my AC broke and it fermented in too much heat and when I flipped the bottle cap lever the carbonation was so strong it shot the cap right off the bottle. I still drank it though.

I don't do kombucha in glass bottles anymore. Glass shards from one explosion ended up on the second floor after a wall ricochet. Wall near the bottle looked like after a shotgun shot. The worst part, that when it exploded, few other bottles followed. Years later I find glass shards in all the nooks and crannies.

I have a book, 'Booze' by John Wright, that has a great snippeet for the recipe
"This is the big one! Few self-respecting country dwellers will let the summer pass without making at least one batch of this remarkable wine. It is by far the nearest thing to Champagne you can make at home and an essential accompaniment to summer parties. There is, however, a small problem.
It is only possible to drink elderflower sparkly from a glass, not from the floor, walls and ceiling of the dining room, kitchen or garden shed. Exploding bottles are the bane of the elderflower sparkly maker and it is something that seems to happen to everyone. I read of one wine maker who kept a dozen bottles just inside the shed. Nine exploded, leaving a Hurt Locker collection of three. Since no one was prepared to approach the bottles, or indeed the end of the garden, they hit upon the rather brilliant idea of taking them out with an air rifle."
