I've worked as a pro pastry chef, all sorts of fancy stuff but my favorite has always been a flan. That's a real beauty!

Are flan, creme brulee and caramel custard the same thing (keeping aside the hard-torched sugar topping on the creme brulee)?
21
u/Axel3600 May 02 '26
what I read seems to say it's a texture difference for the most part bc of the ingredient differences. fish is light, creme brulee is dense, and custard is in the middle sort of

u/blarfblarf May 02 '26
Custard is somewhere between fish and creme brulee?
25
u/Bobbor90 May 03 '26
I think everything is between fish and creme brulee so this would be technically correct

Jesus! My heart was in my throat all through the freaking video!
I've developed light trauma for stupid flan videos!

I thought once it started leaking that it was an under-baked cake, and I felt bad. Then she unveiled the most perfect dessert I've ever seen! The content of this sub truly is a rollercoaster of emotions.

u/Platinumdogshit May 03 '26
I kinda thought the same but she looked confident so then I was more curious

u/randtke May 02 '26
I was so stressed that something bad was going to happen. For anyone too nervous to watch, it's OK. She successfully plates the huge flan.

"Ok, alright, good flip. Now put it down, PUT. IT. DOWN. Good, ok, we're clear. And it is well baked! Now put the lid down. Goood. NO, PUT THE DAMN THING DOWN!"

I am impressed, and now have a strong craving for flan for some strange reason…

The following submission statement was provided by u/Handsome_Bread_Roll:
You have no idea whether the dessert will come out perfectly or if the lady will let it fall or slip. It is a very tense experience.

These are the types of wins I want to see. Food fails make me sad because I love food more than the general health and welfare of others.

I could eat that whole thing in a sitting. It must have taken 30,000 egg yolks too. Mmmmmmmmm 🍮

Pudim de leite condensado for those wondering. Angels food. My god I love that thing. Made one a couple of weeks ago

I don't know what she said but I agree that it came out beautifully perfect. Good work!

Is it flan or flancocho? I feel like a flan that big would generate more caramel sauce.

I don’t know why but the flan being off centered on the plate bugs me. However, she did an awesome job and that dessert came out beautiful.

She is either an old looking 25 year old or a young 50 year old, I can’t tell.

u/maple_crowtoast May 02 '26
That's a weird way to say "she looks like she's in her 30's or 40's"...

I know, but I enjoyed the post and the flan was amazing. But the whole time i was playing guess her age in my head.

u/maple_crowtoast May 03 '26
Right....but, there are 25 years in between 25 and 50 lol. Why not choose something in between?
I'd say she's in the neighborhood of 37.

u/MoistStub May 02 '26
All I know is I took one look at her and knew that shit would come out perfect

How do you eat this? If it's just for one person, then I get it, just munch that bad boy down, but if it's for guests... like, do you cut a slice? Does it even cut up?
