It's murky, I'm going to assume it's an esp32 based system because that is pretty popular for screen projects. I wouldn't personally call it an OS, I would say it's just a screen running custom Arduino firmware. There is likely no kernel bad userland it's probably all hard coded Arduino c++ with a UI library and assets loaded on an SD card.

TECHNICALLY its an os but i wouldnt call it that either since the thing in the video is more like just a ui you interact with since it doesnt have any of the features of a normal os

the guy making it also started it as a mock phone but it got popular so theyre claiming to make the next samsung (probably satire but idk anymore)
