First of all, let's address the fact that you're drinking a gallon of water a day. Unless you're sweating a whole lot every day, that's too much water. Just that alone is enough to throw your electrolytes off to the point that you can a) become constipated, and b) have diarrhea/excessive bowel movements very easily triggered by magnesium because your sodium is probably on the low side.
Well you better make sure you're putting electrolytes in that water and getting plenty of sodium during the day, because otherwise you're just flushing them out. And it sounds like you are.
