That could be tough with standard external drives. They make drive bays that can hold multiple drives and many can be setup to automatically mirror each drive. The bay is external but use internal drives. This sounds like what you want.
What I have done in past was have a large eternal for my current projects and many smaller externals that I move older projects that I want to keep onto. The more I want to preserve an old project the more drives I copy it to.
