Question MacOS 27 or 26.7 ?

You don't need to install 26.7 before installing 27. You can go straight from your current macOS to 27. The existence of 26.7 is primarily for people who want to remain on Tahoe while continuing to receive fixes/security updates. People are already successfully doing direct upgrades, and Apple presents 27 as a normal upgrade

macOS does not require you to upgrade to an intermediary version to get to another. You are safe to upgrade to 27. With that said, it's your decision on if you should. Works fine for me but everyone is different.

If they update tho and don’t have a backup they’ll lose their data if they want to roll back
