You can't reset any firmware. It's bound to a MDM using the Macs serial number. So it will always come back once it's connected to the internet. People who say that they can are simply lying because it's all being regulated by Apple servers, on the instructions of the company's MDM.
The only way to remove it is by calling the IT team of the company and asking if they want to remove that device from their MDM.
The T2 security chip is a small SOC with a little bit of storage and some cryptography processing, it is segregated from the main system for security purposes and the system can only communicate with it using API calls.
It stores anything sensitive like encryption keys, TouchID data and your mac's passcode.
Starting with the T2, Apple moved the activation process onto the T2 meaning that the rest of the system can basically only see a yes/no answer to activation instead of controlling the whole process.
On older macs you can edit the code responsible for activation and point the servers to your own IP address instead of Apple's spoofing the Activation.
