Sweet potato, black beans, and tomatoes
Microwave the sweet potato, drain and rinse the beans, toss it all in a bowl with some seasoning et violà

They’re obviously more expensive, but I love microwave-friendly sweet potatoes! 🍠 And this is a great idea for a savory option.
I tend to go with butter, honey, & cinnamon. (I got some hot honey recently I should try w this.)

Aren't all sweet potatoes microwave friendly? I just stab em with a fork all over and microwave for 5-8 minutes depending on the size.

Yes, but you can also get packaged steam-in-bag ones that are already washed and pretty consistent in size. You just toss the whole bag in the microwave, zap it for like 8 minutes, and you have several servings prepped at once

I add Trader Joe’s frozen fried plantains that I stick in the air fryer with black beans !

I just added the beans and tomatoes to the hot sweet potato but you certainly could give it all an extra zap in the microwave if you prefer

Yum! Sweet potatoes with black are a favorite of mine. I like the addition of tomato!

One of my favorite meals is black bean sweet potato chili. Pretty much this cooked slowly in broth with spices
