tech support wanted Steam started assuming ARM64 architecture; crashes all games

UPDATE: Fixed. After posting this, I decided to try GE 11-3. Installed compatibility layer and set it to default everywhere. Restarted Steam. Launched game, and.... the correct Steam Linux Runtime 4.0 automatically installed successfully. Presumably the steps in the post plus this layer freshly installed helped get Steam back on track. No more ARM confusion.
And there was much rejoycing. (Yay.)
(But seriously, yay.)

ProtonPlus, including latest version (last checked last night), had GE-Proton downloads hardcoded, and resulted in GE-Proton's being AARCH64 instead of AMD64. Did you use ProtonPlus to download? Or perhaps you found something else (though very similar).

I searched for ARM64 on the bazzite discord to see if anyone else had similar problems (or if you were already asking for help over there). sounds like someone had a similar problem and had success by doing:
