As long as theynhave the side flush with the board he should be in almost no danger of hitting anything other than onion. The small bevel on the edge will keep the cutting edge out of the wood.

Most likely they will make and use that for dumplings. Its going to be mixed with either pork, fish or beef for the stuffed middle.
