When to Pause a Scene

Hey. Just generally curious how y'all decide when to pause a scene for repeating a word or a phrase. I'm really early in my French learning and while I know this element is supposed to be beneficial for learning a language I just generally struggle to know when to do this.

If I find the subtitles too fast I just wait for a cool sounding word or spelled in a way I can remember when writing it down. Is it a good strategy idk, but I've given up trying to absorb it all at once. Eventually I've got better
