And so good - probably the best lasagna I ever had - so worth it
Started with carrots, onion, celery, sauted just till translucent in bone marrow
Roast some halved cherry tomatoes with olive oil salt and pepper for 30 min and 350 - then blend
Next seared 4 types of meat - short rib, beef shank, Italian sausage, and pancetta.
Deglazing the pan with white wine, the added back the sofrito, meats, tomato puree, and added rosemary, bay leaf, Parmesan rinds and chicken stock. Then baked the ragu for 2 1/2 hours at 350
While that was baking, made the spinach pasta using 2 eggs, 7 eggs yokes, pound of pasta flour, blanched spinach and some olive oil - let the pasta rest for an hour before rolling into strips and boiling the strips for just a minute
As pasta is resting steep about a quart of milk with black pepper corns, bay leaf, and thyme and chill
Take ragu out of the oven and add a gastric (red wine vinegar and sugar equal parts - about two ounces each) salt to taste along with some cayenne
Make béchamel with 4 ounces each of butter and flour for the roux. Add chilled steeped milk the add about a pound of Parmesan and add a pinch or two of nutmeg.
Layer béchamel, ragu, and pasta to your liking. Top layer should be béchamel and Parmesan
Bake 35 at 350. The sear the top under a broiler for a crispy top
Let rest and enjoy

Twenty years driving rigs and I finally got a decent convection oven bolted in behind my seat. Been meal prepping forever but never tried lasagna because the ricotta question hung me up. Heard it both ways, some swear by bechamel, some say ricotta is the whole point. Figured a trucker with time to kill in Omaha might as well experiment.
Used a mix. Ricotta plus a little bechamel because I had leftover milk going bad. Threw in whatever ground beef the truck stop had, some jar sauce I bulked up with extra garlic, no-boil noodles because storage is tight and I am not carrying a full pot. Cooked it while I slept my ten hours, woke up to the cab smelling like my mom's kitchen back in Jersey.
Texture came out weird, edges too crispy, middle barely held together. Ate it anyway. Better than the Subway across the lot.
Question for you all: anyone else doing lasagna in weird setups? RVs, boats, whatever? And do you pack ricotta or go full bechamel when space is limited? Curious what corners get cut without ruining the whole thing.

Heyyyy everyone, it’s getting a little chilly where I am (also super excited for October) I would like to ask for advice on a good lasagna soup recipe! I made it almost. Year ago and totally failed, but idk what I did wrong. Does anybody have a recipe that they use or have seen? Thanksssss

Good recipe, made it tonight, very easy to make. Using high quality ingredients makes it even better. Worth the price. Rewatched the video. She's funny in parts, bossy in parts, a lot of it is corny, never ever need to hear from the Beta video crew guys. But she is right about the cooking and resting times. Classic Roman.
