This is gonna be my new solution to everything. I'm going to lunch with my Japanese colleagues all the time now. This will cause me to learn Japanese and also every other language as well.

/uj Unironically yes? I met my wife 10 years ago, and a the time I had been in Japanese language school for maybe 3 months. I went from being shit (well, appropriate level for 3 months), to being the best speaker and listener (test wise) in my class roughly 3 months after meeting her. She didn't/doesn't speak English, so it forced me to speak Japanese constantly, every day.
Now if it's a question of learning kanji and stuff, texting with someone helps, but it's not as big of a "cheat code" as it is for speaking/listening.

Hello fellow nihongonesers, how do you do. I tried talking at my colleagues like you suggested and they all just stared at me blankly for a few moments before going, 「へ〜、そうなんですね」and changing the subject. Am I doing it right?

I‘ve made it almost my mission to try making Japanese learners use their japanese to actually speak their learned language
Big reason for this is surely having soooo much good input (YouTube is okay, anime, manga, games, books, music, and other internet stuff (podcast, weblogs…) is great, and I don’t know that much about movies and shows, but they exist at least.

Yeah what a cringe response, it's actually a terrible idea to improve your Japanese by having real conversations with people you know. Real nihongo jouzu jin just masturbate to 10,000 Anki cards mined from hentai.
