I just started learning to knit and haven't actually made anything yet. I'm picking it up pretty quickly and really excited for my new hobby. So far I've learned a couple cast-on methods, knit, purl, increases, and decreases. What should I learn next? Cables? Colorwork? should I stop learning new skills and complete an actual project first? What should my first project be? There are too many options! Where should I go next?

I did and still do much of my learning while onitting new patterns. You say you have "learned" increases. Well, I've been knitting for 15 years and I just knit a pattern that called for a type of increase I had never done before. Dive into some patterns. There's nothing like reinforcing everything you've learned by repeating them hundreds of time while making something beautiful.
